But what exactly is the difference between herbs and spices?

Both terms are often used interchangeably, but if you want to put the icing on the cake:

The plants that are among the herbs are almost exclusively used for their chlorophyll and woodfree stems, such as thyme, oregano, peppermint etc. Generally herbs thrive in areas with a temperate climate.
Spices are a broad concept: sometimes a plant used for the flower buds (cloves for example), sometimes stamens (saffron), sometimes the seeds (mustard, caraway, coriander), but also the fruit, bark and rhizome. Most spices are from the tropics such as nutmeg, cloves and pepper.
