Spices from The Americas

European voyages to The New World in the 15th and 16th introduced a whole new world of spices to the global palate. These included allspice, capsicum peppersvanilla, and cacao.

Allspice was one of the exotic treasures that Columbus presented to the Spanish royal court on his return.  Capsicum peppers include the fiery jalepeno, and the even more ferocious habenero. Vanilla is the only species of orchid that is cultivated for consumption. The cacao seed, also known as cocoa is of course the basis of chocolate, which turned out to be quite popular and hard to imagine desserts without first thinking of chocolate.
